Initial commit — MediaStack VM config and documentation

VM 113 on PVE1: Sonarr/Radarr/Prowlarr/qBittorrent behind WireGuard VPN.
All traffic exits through DO server, bypassing home ISP.
NFS exports movies and TV to Jellyfin (VM 112).
